4 ears corn
2 tablespoons mayonnaise
2 tablespoons sour cream
2 tablespoons fresh lime juice
1 tablespoon cilantro, chopped
½ cup queso fresco
½ teaspoon chili lime seasoning
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Preparation
Place the tray into the steaming pot. Put the corn onto the tray . Secure lid. Select Vegetables, and set the timer for 8 minutes; press Start/Stop.
While the corn is cooking, combine the remaining ingredients in a medium bowl. Reserve.
Once timer expires, test the corn to confirm that it is cooked through. Let cool to room temperature. Once cooled, cut the corn kernels off the cobs and toss with the mayonnaise mixture. Serve immediately.
